The Yaxell - Ran Filleting knife flexible 23 cm is distinguished by the 69-layer damask blade with VG-10 hard steel core, which guarantees long-lasting cutting performance.

Yaxell has been making professional Japanese kitchen knives for everyday use since 1932. They do this in the knife capital of Japan: Seki. Here they combine modern techniques, designs and materials with the historical knowledge and expertise of traditional sword and knife makers.

Japanese VG10 69 layers Damascus steel
The knife consists of 69 layers of the best Japanese steel. These layers are placed against a layer of VG10 steel, giving you a knife with 69 layers. This is also called Damask steel. The production technique is centuries old and results in stronger and harder knives. This makes the knives indispensable for every kitchen.

Micarta handle
These Yaxell knives use Micarta in the handle. Micarta is a material consisting of a linen impregnated with an epoxy resin. This makes the material very strong. It can take a beating and is also resistant to water. Micarta is known for providing a lot of grip. Even if it gets wet you can still use this knife. The handle has a rounded ergonomic design which ensures that you have the knife comfortably in your hand and have ultimate control over the knife.
